Creamy Avocado Pasta

WOW!  Tonight's dinner was the definition of deliciousness :)  I modified this recipe I found on Pinterest, and it is seriously the best thing I have eaten in quite awhile!  And it was healthy and quick!  SCORE!

2 ripe avocados, seed and skin removed
1/4 cup nutritional yeast
2 Tablespoons minced garlic
4 Tablespoons lemon juice
salt and pepper to taste
2 medium diced tomatoes (garden fresh would be best)
4 servings whole wheat spaghetti or fettuccine

Boil pasta and drain.  In food processor, process avocados, nutritional yeast, garlic and lemon juice until smooth.  Combine pasta, sauce and diced tomatoes in pot and heat over medium-low heat for about 10 minutes.  Makes 4 to 6 servings.

This versions has a little chopped cilantro tossed in.  Hence, the very green color!
