Sloppy Veg Head Joe

When I was a kid, the sloppy joes I always ate were either Manwich or very similar; they were tomato-based, but had a certain sweetness to them.  I had previously tried a vegetarian sloppy joe recipe, but it was too tomato-y for my likings.  So, I came across Rachael Ray's vegetarian version linked on a vegetarian website and made them tonight. They were great! They had a wonderful sweet and spicy taste. I had to make some changes from Rachael's recipe, such as omitting Worcestershire sauce because it is NOT vegetarian (who knew there were anchovies in Worcestershire sauce??!!). So here's how I made these true vegetarian sloppy joes:

1 green pepper, chopped finely
1 large onion, chopped finely
1 tablespoon minced garlic
2 cans black beans, drained and rinsed (15 oz. each)
1 teaspoon ground cumin
1 teaspoon curry powder
salt and pepper
1 large can crushed tomatoes
2 tablespoons brown sugar
2 tablespoons lime juice

In a large skillet, sauté peppers, onion and garlic over medium heat until onions are translucent. Then, add black beans, cumin, curry, salt and pepper. Let this cook for a few minutes. While it's cooking, in a small bowl combine the tomatoes, brown sugar and lime. Add to the skillet and let everything simmer for about 10 minutes. Makes 6 servings.  


Our favorite way to enjoy this recipe is to make
Sloppy Joe Burritos!
Just serve up in a whole wheat tortilla instead of on a bun!
