Couscous Supreme

This is a simple, yet very nice dinner. Scott said that the sun-dried tomatoes are what really made the dish. I must say I agree. Here's the original http://vegweb.com/index.php?topic=12849.0 and here's my version:

1/2 large onion, chopped
2 tablespoons minced garlic
1 sweet bell pepper, chopped
6 to 9 ounces fresh spinach
1 jar sun-dried tomatoes, chopped (in oil and spices)
1 box of couscous (prepared according to directions on box)

Make the couscous. In a skillet, sauté onion, garlic and pepper until softened. Add spinach and cook until spinach is wilted. Add sun-dried tomatoes, cooked couscous and oil from jar of sun-dried tomatoes. Mix well and serve. Makes 4 servings.
