Wild Rice Soup

Dinner at the Ramsey house tonight started out with a colossal failure. I attempted to make sushi, only to find that I am horrible at it. So, I turned to a soup recipe figuring I couldn't mess up something as simple as soup. I started with this recipe: http://www.vegfamily.com/vegan-recipes/soups/wild-rice-soup.htm and made a few changes. The end result was a wonderful, warm, creamy, comforting soup. To say it was delicious is an understatement. It was SO good and not bad for you! Only 1200 calories for the whole pot. You should really try this recipe:

1 box Uncle Ben's Long Grain & Wild Rice
1/4 cup vegan margarine (Blue Bonnet Light is what I use)
1/2 medium onion, chopped
1/4 cup flour
2 cans veggie broth
2 cups non-dairy milk (I used plain soy)
1/2 cup to 1 cup carrots, chopped
2 handfuls of fresh spinach, chopped
salt & pepper, to taste

Prepare Uncle Ben's according to the box directions. While that's going on, melt margarine in a Dutch oven or soup cauldron. Cook onions in margarine until soft. Then, stir in flour; make sure it's mixed well. Add veggie broth and bring to a boil before lowering to a simmer for 10 minutes. Add remaining ingredients and bring to a boil again. Finally, lower to a simmer. Allow to simmer for at least 20 minutes.  Makes 4 to 6 servings.

Oops...forgot to add the spinach this time!  But still yummy all the same :)
