Zucchini Grinders

This was dinner tonight, and it was darn good! Might be a nice alternative to meatball subs.


Here's my version:

1 very large zucchini, sliced into half and then cut into strips
sprinkle of salt, garlic and Italian seasoning
1 1/2 cup basil tomato sauce
1 1/2 cup shredded cheese
4 whole wheat sub rolls

Spray a skillet with non-stick spray. Saute zucchini strips; sprinkle with salt, garlic and Italian seasoning while cooking. Saute the zucchini until it's brown/blackened. Add tomato sauce and allow to simmer until tomato sauce is warm. Serve zucchini in sub rolls with cheese sprinkled on top.
