Indian Dinner

I've never had Indian food before, mostly because Indian restaurants are definitely not abundant in the hills. HA HA But I know that many vegetarians/vegans just LOVE Indian restaurants and Indian food because they are most always vegetarian/vegan. Tonight I had planned to cook something else, but decided I just wasn't feeling it. So, I went to handy http://www.vegweb.com and searched the two main ingredients I wanted to use: spinach and potatoes. Up popped this recipe for Easy Palak Alu http://vegweb.com/index.php?topic=10917.0, a simple Indian dish. I modified it to limit our servings and to add a few things I thought would complete the dish. All in all, I really liked it! So, here's the recipe for my Indian Dinner:

1 can spinach, undrained
3 medium-sized red potatoes 
1 can chickpeas (garbanzo beans), drained
1 tablespoon canola oil
1 tablespoon garlic powder
1 tablespoon curry powder
1 tablespoon chili powder
1/4 teaspoon salt
1 pinch of cayenne pepper (optional)

Cut potatoes into 1 inch cubes. Place in greased casserole dish with chickpeas. Drizzle oil on potatoes and chickpeas; toss to coat everything with oil. Sprinkle garlic, curry, chili powder, salt and cayenne pepper on everything; toss to spread seasonings around. Add spinach and mix one more time. If it looks dry, add just a little bit of water. Cover casserole dish with foil and bake at 425 degrees for an hour.  Makes 4 servings.
